Beef Stroganoff (Main Dish)

Ingredients

Amount Unit IngredientSorted ascending
2 cups beef consomme or 2 bullion cubes in 2 cups of water
3 Tbsp. cooking sherry
2 Tbsp. flour
1/4 cup ketchup
1   large onion, sliced ( like the sweet onions)
1 1/2 pounds of lean beef
3 T. oil
1 cup sliced mushrooms
2/3 cup sour cream

Directions

Saute mushrooms and onions till brown and onions are clear. Tenderize meat if necessary, and cut into strips. Add to pan and brown. Remove to a dish. Add flour to skillet and brown and add bullion slowly stirring constantly to make a smooth sauce. Add sherry and ketchup and blend well. Add meat mixture and simmer about 15 min. Just before serving add sour cream, blending well into sauce. Serve over noodles or rice.
