Pecan Tarts (Dessert)

Joann Caldwell's traditional thanksgiving dessert.

Ingredients

Filling

Amount Unit Ingredient
3   eggs
2/3 C. Sugar
1/2 tsp. Salt
1/3 C. butter, melted
1 C. dark corn syrup
1 C. pecans, chopped

Pastry

Amount Unit Ingredient
1 C. butter
1/2 C confectioners sugar
2 C flour

Directions

This recipe requires a mini muffin pan

Mini crusts

Preheat oven to 350 degrees. Combine the flour and sugar in a mixing bowl, and cut in the butter until the mixture resembles coarse meal.

Make the dough into a small (1") ball and press into each mini muffin cup. (I have a little tool that makes this job a lot easier.)

Filling

Mix eggs, sugar, salt, butter and corn syrup until well blended. Add chopped pecans. Ladle into uncooked pastry shells. Cook about 10 min. at 350˚. Watch them carefully, as they burn easily.
